Orange Cream Cake/ Tort de Portocale

This is one of my favorite dessertst is light, creamy, fresh

Ingredients:
 - Four egg yellows
 - One cup of sugar
 - Two cups of heavy whipped cream
 - Five or six oranges
 - One lemon
 - One cup of milk
 - Two teaspoons of vanilla essence
 - Two packages of gelatin (7 grams each)
 - 150 grams of ladyfingers

Preparation:
 - To start, place a deep (preferably metal) bowl in the freezer: we need it cold to prepare the whipping cream.

 - If you're starting with whole eggs, then separate the yellows from the whites. We won't be using the whites for this recipe - feel free to use them to prepare a healthy omelette or another dessert (how about a Raspberry Foam?).

 - Whisk the yellows with the sugar, then mix with the milk and juices from a lemon and an orange until uniform. Place in a pot on medium heat, and bring to a boil while stirring frequently. The milk loves to bubble up and make a mess on the oven, so keep an eye on it.

 - Meanwhile, mix the gelatin in three tablespoons of water, and let stand for two or three minutes. Add a quarter of a cup of hot water, and mix thoroughly until all the gelatin has dissolved. Pour over the hot milk in the pot, and stir until uniform. Remove from heat, and let cool until it thickens. I usually place the pot in an ice water bath until it reaches room temperature, then transfer the pot to the fridge. We're looking for pudding-like consistency.

 - While the hot mixture is cooling off, you have time to whip the heavy cream. Remove the previously chilled bowl from the freezer. I use a mixer on high speed, and it takes less than 5 minutes to start seeing peaks forming. Add the vanilla essence, and mix until you can easily remove the whisk out of the cream and there is no dripping. Place the whipped cream in the fridge until it is needed. As a note, proper whipped cream could have also used three or four tablespoons of powdered sugar (added in at the same time as the vanilla). But we will combine the whipped cream with the milk mixture, which already has plenty of sugar, so we can skip on adding extra sugar to the whipped cream.

 - Once the milk mixture has reached a pudding-like consistency and the whipped cream is ready, we can go to the final steps of the preparation. We will use a large pot, and we will flip the cake upside down when firm; so whatever goes to the bottom of the pot will become to top of the cake. Coat the pot with a bit of oil, then stretch a layer of plastic foil all around: this will help us flip over the cake without any pieces sticking to the pot. Also, make sure the plastic foil extends past the top of the pot - this will help remove it once we flip the cake over.

 - Extract the juice from one orange and set separately. Feel free to add a splash or rum or amaretto to the orange juice, if you feel adventurous.

 - Peel and slice the remaining oranges, then place them on the bottom and along the side of the pot. This will bring beautiful fresh orange accents to the presentation (see photo above).

 - Once the previous step is ready, quickly combine the chilled milk mixture with the whipped cream. Place about half of it over the orange slices. Dip half of the lady fingers in orange juice, the place the over the cream close to one another. Gently press them in. Continue with another layer of cream, and one more of lady fingers (also dipped in orange juice). Make sure this final layer is pressed into the cream such that it is as flat as possible: remember that we will flip the cake over, and the cake might break if its bottom has ridges.

 - Cover the cake pot with a layer of plastic foil, and refrigerate overnight.

Presentation:
 - For presentation, we will first flip the cake over. Start by removing the top layer of plastic foil. Pick a nice flat plate, place it centered and faced down over the cake pot, then quickly flip the pot over.
The final step is to carefully remove the remaining plastic foil.

 - I love the presentation in and of itself: a clean white cake with beautiful orange accents.

 - A few flowers can further add a nice touch of color to the presentation.

Healthy Breakfast Recipes - 2 Quick Ideas to Kick Start Your Day

Now is a great time to give some thought to healthy breakfast recipes. We often leave home in a stressed state, grabbing a cup of coffee and perhaps a slice of toast on the way. However, breakfast is probably the most important meal of the day. It is the meal that fires up the engines and gives us energy for the day. This couldn't be more important when it comes to children and teenagers - if we want them to concentrate to their maximum and perform on the sports field, we need to ensure that we give them something that will sustain them through the morning.
1 Granola Recipe
This Granola Recipe is a great substitute for commercial cereals - it is lower in fat and sugar and is easily made at home. It is also much more economical. You can ring the changes - substitute any of the dried fruits below with your own choice - goji berries, dried cranberries, dried mango or banana. You can chop the dried fruits in a food processor which speeds things up - process until they are just chopped and don't let them become a mush.
Ingredients:

2lb 2oz / 1kg rolled oats
quarter cup oil
half cup honey, melted
1 cup hot water
1 teaspoon ground cinnamon
1 cup toasted almonds, chopped or whole
2 cups raisins (about 8oz / 250g)
2 cups chopped dried peaches
2 cups chopped dried figs
5 oz / 140g chopped dried apple rings

Method:

Heat the oven to 300 degrees F / 160 degrees C.
Pour the oats into a large baking tray. Combine the hot water, oil, honey, vanilla and cinnamon. Pour over the oats. Make sure that the liquid is well stirred in.
Bake for about an hour, stirring every 10 minutes. Make sure that the mixture doesn't burn. It is ready when the oats are no longer wet and are golden in color.
Remove from the oven and add almonds and dried fruit. Stir very well.
Allow to cool and then store in air tight containers.
2 Mango Lassi Recipe

Protein is important first thing in the morning, but you may not have the time or inclination to cook up eggs. Fruit Smoothie recipes are prepared in seconds and this Mango Lassi Recipe is both delicious and satisfying.
Ingredients:
2 ripe mangoes - about 12 oz / 350g
2 cups yogurt
half cup milk
2 tablespoons sugar (optional)

Method:

Peel the mangoes. Cut the flesh off the pip.
Place the mango, yogurt and milk in a blender.
Sweeten the mango lassi with a little sugar if necessary. If your mangoes are very sweet you won't need to add sugar. This mixture is fairly thick, so you may want to add a little more milk.
Pour into 2 - 3 glasses and serve

Nutritional Health in Sports

  • Nutritional health is very important. The nutrients that we take in are practically the reasons why we are healthy or why we are not. It could also be a grid to determine if we can eventually become sports superstars or not. Nutritional health may be the main reason why you are tall, strong and have the skills to be good in sports. This is also vital for having a strong mind and a healthy body because of the fact that these nutrients fuel almost all bodily functions.

  1. In reality, many people fail to achieve a high level of nutritional health. Some reasons why they are not adequately nourished is because of their lack of information. Some people do not even know that what they are eating is bad for them. Some food also lack nutritional facts that they should have on their labels. And some just do not care at all.

People also have this misconception that what is tasty is good for your health. It is really hard to resist unhealthy food because of their availability on the market. Media also advertise more on unhealthy junk foods rather than healthy ones. Unhealthy food may be a reason for us to be fat. If you want to keep healthy, you must first get rid of unwanted fats and be fit as possible.

  • Some athletes also have low nutritional levels because of certain factors. One is poor understanding of sports nutrition principles. They think that eating many will make the healthy.

Nutritional requirements also differ among people depending on their training program and personal characteristics like age, sex and body type. Their failure to recognize these may also cause malnourishment as they may take too much or less of their nutrients required.

  • Some athletes also diet too much compromising their nutritional needs. Their lack of knowledge on nutritional facts also contributes to it. Their lack of time and opportunity to eat and the tendency to skip meals is also one reason. Overeating is also a factor of malnourishment because you might eat and take in a lot of fats and unwanted chemicals that may be unhealthy.

The sports nutritional health can be broken down into the foundation of what food is basically made of namely proteins, carbohydrates and fats. We should get optimum amounts of these types for more energy and more muscle gains. You can only lose more than one pound of fat per week if you exercise properly and eat the right food instead of starving yourself. Starving will only bring you malnourishment.
  • If you are losing fat quickly by starving yourself, over dieting and doing too much exercise, you may be at a risk of slowing down your metabolism and your body might start using the glucose found in your muscles as a source for energy. That is why losing weight bit by bit for a long period of time instead of losing weight quickly is much more preferable.

There are toxins found in our fatty tissues and when we loose fat, these toxins are released back into our body. Losing too much fat in a short period of time means that you are releasing more amounts of toxins into the body causing us to be sick.

  • On your diet, try to avoid eating food with too much saturated fat because they are bad fats and will make you gain more weight. What you should do is to ingest unsaturated fats of the good fat because it will help you lose weight.

By eating good oils like deep-water fish oil, flax seed oil and linseed oils, you are actually aiding yourself as it rids your body of fatty deposits helping you lose more fat. This weight loss program actually takes a lot of time so only take measurements every two months to give you a better look on how your are progressing on keeping fit and sexy and how much fat you are actually losing.

  • I discourage you on taking those commercial diets because they will only set you up for failure and disappointment. These diets make you lose fat so quickly that when you try to start eating again more than you did while on diet, you will gain weight very fast. You should look for a way to lose weight in a slow and realistic rate.

Here are some tips: First is to stay away from white sugar and all other natural sweetener. You should also stay away from simple sugars and take in slowly digested complex carbohydrates. Eat food high in fiber in order to detoxify. And lastly, exercise. The right combination of exercise and nutrients will give you a high level of sports nutritional health
